Meathead Caffeine – Simple Protein Coffee to Kick Sugar’s Ass

protein coffee 2I’d like to blame a fast metabolism, but whatever it is, no matter how massive my breakfast I just HAVE to have something by 11am.
A little trick I found a while ago when I didn’t have any protein treats to hand (and didn’t want to give into a sugary coffee) was to add a half or whole scoop of my favourite vanilla protein to my caffeine hit of the day.
This recipe is also great if you’ve already incorporated whey protein into your diet, but are getting seriously bored of protein shakes! Here I’ve added quick and simple directions what will put a spring in your step and help you fight off the sweet tooth demons while those around you are tucking into a muffin with coffee!

Insanely Easy Almond Milk

So after lots of times watching wonderful youtubers making delicious looking almond milk with Vitamix things, food processors and muslin bags, I decided to have a crack at it myself. I’ve been a bit bored with my coffee lately and thought almond protein coffee would be pretty slick.

However I  had no plans to leave my house and go to Mothercare, be seen by friends mothers and start rumours about being “up the Damien” – preggo to non Irish folk – and also didn’t feel like investing beyond my already well loved hand blender.

So after some messing about and lots of giggling about bags that look like cow udders, I perfected my insanely simple recipe and was smugly offering guests homemade almond milk for their porridge and coffees.

I implore, no demand, that you try is recipe, it will make all those store bought almond milks seem junky and wildy expensive and its simple as anything and cheap as chips!

Determined not to feel deprived, but not not to be a bollox to the ocean – my source of relaxation and play – I set out to find the simplest ways to eat more sustainable seafood. Everybody’s Ice Cream

When I’m doing the catering up at the Gyreum Ecolodge, I’ve noticed that nothing can make someones spirits drop faster then realising they can’t have the desert. Be it veggies and gelatin, vegans and dairy, allergy folk and nuts or coeliacs and gluten.

As a major desert fancier and all round sweet toothed fiend I was very sad for these folks. The ice cream recipe below so far has only come up against one contender who couldn’t have too much potassium, but otherwise its basically everyone friendly being : gluten free, vegan, nut free and paleo friendly!

It’s a dead simple to make “ice cream” that doesn’t involve any fancy machines.

Notions in the Ocean

I’m one of those extremely hyperactive people who can basically only rest if they’re really sick.

So to allow myself some downtime, I’ll trick my brain by reading books that are sort of like study. Yah, nerdy I know, but what can you do?

Where’s the Fat Gone?

Strangely for someone with a scientific background, who studied biology in college, it took my ages to process the idea of where fat went as you lost weight.

Did the weight loss fairy take it away at night? Was it being eaten up by my body during those cardio/HIIT sessions that made me want to cry?

Recently I came across this Tedx talk by Ruben Meerman (his site here) and was blown away by how he made what was complex and indigestible in college, easy to understand in 20 minutes of the day. I watch a criminal amount of Tedx talks, but that’s a story for another day!

I won’t spoil the surprises, but the simplicity is staggering. So many companies and publications try to make fat loss confusing, so its refreshing when someone lays it all out on the table. Zero mystery!

fin_blogpic5I’ve been an active water baby and loved sports since I was a nipper, but my true love affair with living a fit and healthy lifestyle didn’t start until 2009 when I was diagnosed as a coeliac. Diagnosis was I and was like shizz what am I supposed to do now?

As a vegetarian at the time I literally felt like there were zero options left! Wheat was everywhere and a grim future of rice cakes was laid out before me. As everyone does when faced with a new challenge, I asked my old friend the internet what to do. I found amazing women (sorry lads I was biased at the start) living fit healthy lives (gluten free!) like the Tone It Up girls Karena and Katrina (see their awesome website and community here) or Brenda-Leigh Turner of Lean Secrets (her YouTube channel here). I knew I’d be just fine.

Over the last six years of successes – going from a basic swimmer to a beach lifeguard and working as a surf instructor – and complete muck ups – hemp protein muffins that stank up the house, blurgh – I’ve developed all sorts of strange tricks, healthy recipes and stumbled across handy little healthy snack ideas in the oddest of places. If, like me, you are in any kind of job (or a student) with irregular hours, long hours, shift work or work somewhere where you simply have no control over your cooking or don’t have access to a fully stocked gym then this blog is the one for you! I also came up with a lot of the recipes while in college so they won’t break the bank either and can usually be measured with a cup, tablespoon and a pint glass. Classy I know.

It was tough sometimes along the way not always having someone else who shared my passion for healthy eating – think housemate exclamations of “ew what’s that?!”, though in fairness chia seed pudding does look like frog spawn,yum – so I loved the idea of starting a blog where other coeliacs (old hats and the newly diagnosed),  people who are already into healthy eating or those just starting out could all come for information and edible inspiration.

The internet and the media in general are sooo full of wonky, sneaky health advice – I’m looking at you naughtly sugar ladened “healthy” granolas – that it sometimes seems impossible to know where to start. So this blog will share not just my recipes but also advice on how to maintain a decent exercise routine and diet while travelling and working your butt off. There will also be lots of stuff about the ocean, because, well, marine science and I love to surf and generally just play around in the sea!
